Gluten-Free and Lactose-Free Birthday Cake

INGREDIENTS

  • La Granja Foods Original Gluten-Free Sponge Cake
  • 1 cup of raspberries and blueberries, or other red fruits to taste
  • Zest of half an orange
  • 2 Medjool dates
  • 1/2 cup of water
  • 400 g lactose-free cream cheese*
  • Vanilla extract, to taste*
  • All ingredients are gluten and lactose-free

ELABORATION

  1. Start by designing the shape of your birthday cake. We’ve chosen the number 4, but you can choose any number or shape you like using portions of La Granja Original Gluten-Free Cake. Once you’ve decided on the shape, the next step is to cut the cake portions in half, as we will place the crushed red fruits in the middle.
  2. Once the cake portions are halved, mash the red fruits with a fork or whisk and spread them on one half of the cake. Place the other half on top.
  3. In a blender, add the zest of half an orange, the two Medjool dates (without skin or pits), and the water. Blend them into a smooth liquid to sweeten the cream cheese. Set it aside.
  4. In a bowl, combine the two tubs of lactose-free cream cheese, the liquid caramel we just made, and vanilla extract to taste (we added a tablespoon). Mix until smooth and homogeneous.
  5. Use a spatula to cover the entire cake, as shown in the picture, and decorate it with whatever you like: fruits, flowers, or chocolate.
