Gluten Free and Lactose Free Strawberry Cream Cake

INGREDIENTS

  • 6 Gluten-Free and Lactose-Free Marble Cakes from La Granja Foods
  • 500 ml lactose-free milk
  • 100 g sugar
  • 50 g cornstarch
  • 4 egg yolks
  • 1 tablespoon vanilla extract
  • Strawberries
  • Red fruit jam

*All ingredients used are gluten- and lactose-free

ELABORATION

  1. Crumble the six portions of the Gluten-Free and Lactose-Free Marble Cake from La Granja into a bowl and add 100 ml of lactose-free milk (about half a glass). Mix well by hand until smooth.

  2. Press the mixture into the base of a round springform pan and refrigerate.

  3. In a bowl, mix the vanilla extract, cornstarch, sugar, half of the milk, and the egg yolks. Stir until smooth. Add the rest of the milk and mix again.

  4. Transfer the mixture to a saucepan and cook over medium heat, stirring constantly. The cream will thicken as it cooks. Once thick, remove from heat.

  5. Let the cream cool to room temperature. Then cover it with plastic wrap, making sure it touches the surface to prevent a skin from forming. Refrigerate until fully chilled.

  6. Once the cream is cold, use a spatula to spread it over the cake base, then top with red berry jam.
