Lemon Pie

INGREDIENTS

  • Oat and Flaxseed Biscuits from La Granja Foods
  • 100 gr. of butter
  • 4 lemons
  • 400 gr. of condensed milk
  • 4 sheets of gelatin
  • 1/2 teaspoon of turmeric
  • 4 egg whites
  • 200 gr. of powdered sugar
  • 1 lemon

ELABORATION

  1. Crush the biscuits and mix them with the melted butter until you form a paste. Line a tart-shaped pan (it should be removable to make it easier to remove the Lemon Pie). Set aside in the refrigerator.
  2. Soak the gelatin sheets in cold water for 5 minutes.
  3. Juice the 4 lemons. Microwave the lemon juice with the soaked gelatin for 2 minutes until the gelatin is fully dissolved in the juice.
  4. In a bowl, mix the lemon juice and dissolved gelatin with the condensed milk until you get a smooth mixture.Pour the mixture into the pan with the biscuit base and refrigerate the pie for 4-6 hours.
  5. Decorate the Lemon Pie with meringue for an extraordinary combination: In a deep bowl, whisk the egg whites with electric or manual whisks. When the mixture starts to thicken, gradually add the sugar and continue whisking until the mixture is firm. The meringue will be ready when you turn the bowl upside down and it stays stuck to the base.
  6. If you don’t have meringue, you can use red fruits.
  7. Grate the peel of one lemon over the top.
