As it could not be otherwise, the first gluten-free product of the house Sant Tirs have been the wafers, made from corn starch. At first glance we will see toasted wafers, well made and with good presence: nothing will make us think with the surprise that awaits us. These wafers have a special crunchiness, given by the corn starch. A particular taste that makes it unique and the favorite of many people, both celiacs and non-celiacs.
But… What is Sant Tirs?
In 1985 Miquel Romeu and his wife, Enriqueta Ferreres, started their business adventure. The couple used to travel to Ribera de Urgellet, in the Pla de Sant Tirs, where they would savor the delicious handmade wafers made in the town’s bakery. Pursuing a romantic dream, they decided to buy that artisan workshop and found Barquillos Artesanos Sant Tirs.
It was clear to them: they would modernize the production systems, but they would be faithful to the roots of the craft that captivated them. They would maintain the artisanal production and the use of natural ingredients, which make these wafers unique.

Elaboration process

1. Elaboration of the dough
The first secret lies in the variety of flours and flavors to make the best cookie base.
2. Cooking and product format
The right baking time, not a second more or less, is vital to give the cookie the desired shape.
3. Baking with topping
The coating transforms the flavor of the cookie and therefore its quality and flavor must be up to the most demanding palates.
4. Packaging
The last manual process of the production before its distribution. This is the moment to do the quality control to make sure that all the wafers are perfect.
